Broiling a Lobster Tail
Start with a defrosted lobster tail.
Place the lobster tail on a cutting board.
Take kitchen shears and cut the lobster shell down the middle.
Slide your finger inside the shell taking care to not get cut on the ragged edges.
pull the shell apart a little and loosen the lobster meat from the shell tail and pull the meat
through the cut, placing on top of the shell.There are other ways to cut and display the meat,
this is the way most chefs show off.

7 oz – 8 oz 7 – 8 minutes
9 oz – 10 oz 9 – 10 minutes
10 oz + 1 min per ounce
You must keep a close eye on the tails, they will overcook quickly and turn rubbery. The
lobster tails are done when the internal temperature reaches 145 degrees. The meat may be
slightly browned but should be firm to the touch.
